Healthy, simple and tasty cinnamon bran muffins made from a mix.
Vegan substitutions were added.

Grain Berry Cinnamon Bran Muffin Mix
1/3 c. Coconut Oil (substitute for canola oil)
1/2 c. Applesauce (substitute for eggs)
1 c. Almond milk (substitute for cow’s milk)
Preheat oven to 400 degrees and grease muffin tins.
Mix all ingredients together.
Fill 12 cups 2/3 full with batter.
Eat the rest of the batter (optional 😉).
Bake for 15-20 minutes.
Let cool for 5-10 minutes.
I baked these on a Sunday which is great because we used them for breakfast and snacks for the week.
You can freeze them as well.
And FYI they do have a great taste and texture but it’s nothing super indulgent. As my husband put it “kinda no frills.”
